How to tell when your maize is ready to harvest

Harvesting at the right time protects both yield and flour quality.

1. Look at the husks: they turn from green to pale yellow and dry. 2. Check the silks: they become brown and dry. 3. Press a kernel with your thumbnail: mature kernels are hard and show a black layer at the base. 4. Dry the cobs well before storage to prevent mould and aflatoxin.
